For the Chicken

Chicken

Boneless, skinless chicken breasts work great here, but chicken thighs would be just as delicious. Cut them into evenly sized pieces so that they cook quickly and evenly.

Olive oil

Used in both the marinade and for cooking, a good-quality olive oil will really make a difference in the flavor of your Greek chicken bites. Use extra-virgin olive oil for the best flavor.

Garlic

Use freshly minced garlic for the best flavor and add it just before finishing the dish, so it doesn’t burn in the pan.

Chicken Broth

I like to use chicken broth to deglaze the pan and keep the chicken bites juicy while concentrating the flavor. You can also use use water if you don’t happen to have any chicken broth. You can also replace some of the chicken broth with dry white wine.

Fresh Herbs & Lemon Juice

A sprinkle of chopped parsley and a final squeeze of lemon bring everything together at the end!

For the Greek Marinade

This Greek chicken marinade is the base of all that amazing flavor! It’s the same one I use for my Greek chicken salad, minus the garlic, which gets added later to avoid burning. The combination of red wine vinegar, lemon juice, and Dijon mustard adds the perfect balance of acidity and depth.

Step by Step Instructions

  1. In a large bowl, whisk together all the marinade ingredients except for the olive oil. Slowly pour in the olive oil while whisking vigorously until the mixture is fully combined and emulsified.

  1. Add the cubed chicken to the marinade and toss well to ensure each piece is coated. Cover and refrigerate for at least 20 minutes, up to 6 hours.

  1. Once marinated, remove the chicken, pat it dry with paper towels, and season lightly with salt and pepper.

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Arrange the chicken in a single layer (if needed, cook in batches to avoid overcrowding).
  1. Sear the chicken for about 2 minutes until golden brown, then flip and cook for another minute on the second side. Do not fully cook it at this point. Transfer the chicken to a plate – it will finish cooking later.

  1. Add the minced garlic to the same pan and sauté for about 20 seconds, just until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom with a wooden spoon or silicone spatula. Let the broth simmer until it reduces by half.

  1. Raise the heat back up to medium high and return the chicken to the pan, stirring occasionally as the broth evaporates and the chicken finishes cooking.

  1. Once the liquid has evaporated and the chicken is cooked through, remove from heat. Stir in fresh parsley and a squeeze of lemon juice to taste. Toss everything together and serve warm.

Serving Suggestions

  • Serve these juicy chicken bites over plain rice or this Greek rice pilaf for a hearty meal.

Ingredients

  • 1.5 lbs chicken breasts boneless, skinless
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 3/4 cup chicken broth cut into 1.5 inch cubes
  • 1 tablespoon parsley chopped
  • lemon juice

Marinade

  • 1/4 cup red wine vinegar
  • 3 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon sugar
  • 2 teaspoons dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/2 cup olive oil

Instructions

  • In a large bowl, combine the marinade ingredients, except for the olive oil. Slowly drizzle in the olive oil while whisking until well combined and emulsified.
  • Add the cubed chicken to the marinade and toss to coat. Refrigerate for 20 minutes to 2 hours. Remove the chicken from the marinade, pat dry and season with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer (cook in batches if using a smaller pan, to avoid over crowding the pan). Cook chicken pieces for 2 minutes until nicely seared and flip. Cook for one more minute on the second side and remove to a plate. Do not cook the chicken through at this point.
  • Add the garlic to the pan and saute for 20 seconds until fragrant. Add the chicken broth and stir with a wooden spoon or silicone spatula to scrape up the brown bits. Continue to simmer the broth until reduced by half.
  • Add the chicken back to the pan and cook, stirring occasionally, until the liquid has evaporated and the chicken is just cooked through. Add the parsley and a squeeze of lemon juice to taste. Toss to combine and serve.
