Chili Lime Shrimp – in 30 Minutes!

Juicy grilled shrimp tossed in a zesty chili lime marinade, chili lime shrimp are quick to make and packed with bright, smoky flavor. Perfect for an easy summer meal!

I almost always have a bag of frozen shrimp in the freezer. It’s honestly one of the best things you can do for your weeknight dinner game. Shrimp thaws in minutes, cooks in even less time, and soaks up bold flavors like nobody’s business.
This particular recipe has been in our summer rotation for years, and every single time I make it, I’m reminded of why I love it so much.

How To Buy Shrimp
Here’s my number one rule for buying shrimp. And it’s a bit… counterintuitive. Buy it frozen, never fresh!
I mean *never* is a strong word. If you can find LIVE shrimp, go ahead and buy it fresh. But the sad fact is that the vast majority of “fresh” shrimp sold in grocery stores was previously frozen and thawed.
Yes, it’s the exact same shrimp you can buy in a bag frozen, except it’s been thawed and left to sit out for who-knows-how-long!

How To Quickly Thaw Frozen Shrimp
Besides their versatility, another reason we love shrimp for weeknight meals is because of how quick they are to thaw, even if you’ve left everything to the last minute (usually how I roll).
My favorite way is to plunge the bag into a bowl of cold (not warm) water. They should be thawed in about 30 minutes that way.
If you need them faster, you can put them in a colander under cold running water. This will take about 15 minutes. I tend to opt for the bowl method because I hate to leave the water running.
If you’re the type who thinks ahead (you’re amazing), you can of course put that bag of frozen shrimp in the refrigerator the night before and let it thaw slowly in there.
Why You’ll Love These Chili Lime Shrimp

30 minutes, truly. That includes the marinating time. Shrimp cook so fast that this is a real weeknight meal with zero stress.
That glaze though. If you love that store-bought Thai sweet chili sauce, this chili lime shrimp recipe is for you. The marinade has all those same sweet, tangy, slightly spicy vibes – just made fresh at home with simple ingredients.
So flexible. Grill pan, outdoor grill, or a simple nonstick skillet – all work perfectly. Skewers or no skewers. Tails on or off. You do you!
A crowd pleaser. The chili heat is mild enough for most palates, and that honey sweetness makes it good even for picky eaters.
Ingredient notes

Shrimp
Large shrimp work best here – they hold up on skewers and don’t overcook as quickly. Leave the tails on for a prettier presentation, or take them off for easier eating. Both are delicious!
Honey
This is what gives the glaze that sticky, slightly caramelized finish on the grill. Don’t skip it. Maple syrup also works in a pinch!
Lime Juice
Please use freshly squeezed here! The bright acidity is a key part of what makes this glaze so good, and bottled just doesn’t compare.
Garlic
Just one clove, but it cuts through the sweetness and keeps everything tasting vibrant and layered.
Fresh Chili Paste
I use an Indonesian fresh chili paste called sambal oelek in this recipe. It’s quite easy to find in the grocery store and will probably be right next to the sriracha.. In fact, sriracha is a good substitute for sambal oelek in this recipe, if you prefer it.
But do give sambal oelek a try if you’re feeling adventurous! It’s an essential condiment in my kitchen. I use it in this peanut sauce, which come to think of it, would make a great dip for these shrimp!

Step-by-Step Instructions to Make Chili Lime Shrimp
- In a medium bowl, whisk together the olive oil, garlic, lime juice, honey, and chili paste until combined.

- Add the shrimp to the marinade and toss to coat. Cover and refrigerate for 20–30 minutes.

- Thread the marinated shrimp onto wooden skewers and sprinkle with salt. I find smaller 6-8 inch skewers to be best for spearing delicate shrimp, but the larger 10-inch ones will work too.


- Preheat a grill pan or outdoor grill over medium-high heat and brush with oil. Place the skewers on the grill and cook for 1–2 minutes per side, basting with the leftover marinade as they cook, just until the shrimp are opaque.


- Transfer to a platter, squeeze a little extra lime juice over the top, and scatter with fresh cilantro. Serve over baked coconut lime rice, or whatever rice you prefer.

Serving Suggestions
These chili lime shrimp are incredibly versatile – here are some of my favorite ways to serve them!
- In tacos. Tacos are honestly one of the best ways to use these shrimp. Load them up with a simple asian-inspired slaw, and a squeeze of lime.
- On a salad. Pile them onto a big green salad with avocado, grilled peppers, and onions for a light but satisfying meal.
- With grilled veggies. Serve alongside grilled summer veggies for a colorful, flavorful spread that’s great for summer entertaining.
- As an appetizer. Leave them on the skewers and serve on a platter at your next backyard gathering – they disappear fast, I promise! Try serving them with this peanut sauce for dipping!

Recipe Tips
Don’t over-marinate. 20–30 minutes in the fridge is the sweet spot. The lime juice will start to break down the shrimp if you leave it too long, and nobody wants mushy shrimp.
Cook in a single layer. Whether you’re making chili lime shrimp skewers or cooking on the stovetop, make sure the shrimp aren’t crowded. If needed, work in batches so they sear rather than steam for that gorgeous caramelized glaze on the outside.
Watch the heat. Medium heat is your friend here. Too high and the honey in the marinade will burn before the shrimp are cooked through.
No grill? No problem. You can absolutely sauté the shrimp in a nonstick skillet right on the stovetop. Heat a little oil over medium heat, add the shrimp in a single layer, and cook 1–2 minutes per side. Alternatively, the air fryer works great too! Cook at 400°F for about 5–6 minutes, shaking the basket halfway through.
Want more spice? Add a pinch of chili flakes or powder to the marinade for an extra layer of smoky depth, or just add more sambal oelek.

Storage Instructions
Leftover shrimp keeps well in an airtight container in the fridge for up to 2 days. When you’re ready to eat, reheat gently in a nonstick skillet on the stovetop over low heat with a tiny splash of water or lime juice to loosen up the glaze.
I’d avoid the microwave if you can, as it tends to make shrimp rubbery and overcooked-tasting, which is a real shame when the original texture is so good.
These chili lime shrimp also freeze surprisingly well! Let them cool completely, then transfer to an airtight freezer-safe container or zip-lock bag and freeze for up to 2 months.

Chili Lime Shrimp
Ingredients
- 1 lb raw large shrimp peeled and deveined, frozen and thawed, tails on or off*
- 2 tablespoons olive oil
- 1 clove garlic minced
- 1/4 cup lime juice freshly squeezed
- 1/4 cup honey
- 2 teaspoons sambal oelek chili paste* or substitute sriracha
- pinch salt
- 8-10 small wooden skewers or 4-5 large ones
- 1/4 cup chopped cilantro
- coconut lime rice* for serving
Instructions
- In a medium bowl, whisk together the olive oil, garlic, lime juice, honey and chili paste.
- Add the shrimp to the marinade and toss to combine. Refrigerate for 20-30 minutes. Thread the shrimp onto the skewers and sprinkle with salt.
- Preheat a grill or grill pan on medium high heat. Brush the grill grates or pan with oil and place the skewers on the grill, basting with the leftover marinade as they cook. Grill about 1-2 minutes per side, just until the shrimp are opaque. Do not overcook!
- Remove the skewers to a platter, sprinkle with cilantro and serve with coconut lime rice.
