Roasted Cauliflower with Cumin and Coriander

I’ll admit that I was prone to getting into ruts when it comes to vegetable sides. But there was a very simple solution to that: roast your veggies.

Roasting vegetables is honestly one of those tricks that took me way too long to fully embrace, but now it’s pretty much my default move for getting a side dish on the table.

A hot sheet pan and a handful of pantry spices can turn even the most boring vegetable into something genuinely good – these roasted root vegetables and this roasted brussels sprouts and sweet potatoes are both proof of that.

If you’re not a fan of cauliflower in general, I feel you. In it’s raw form, it’s kind of smelly, and it’s usually, let’s face it, the least appealing option on a veggie and dip platter.

But roasted cauliflower is another story altogether. And there’s no need to drown it in béchamel and cheese, 70s-style, either (not that there’s anything wrong with that!).

THIS stuff is coated in an Indian-inspired spice blend and roasted till golden and tender. Roasting it gives it an amazing nutty flavor and brings out its natural sweetness. It’s a healthy, low-carb, flavor-packed side that plays well with all kinds of meats, chicken, and fish.

It’s wonderful served with this chicken and potato curry or these tandoori chicken skewers, or any Indian-inspired dish.

It also happens to be the starting point for one of my favorite salads – I take this same roasted cauliflower and turn it into a cauliflower salad with tahini dressing that’s hearty enough to be a vegetarian main course on its own. And I love to add some to my burrito bowls!

Why You’ll Love This Roasted Cauliflower

Five ingredients, one bowl. Beyond the cauliflower itself, you only need a handful of spices you probably already have in your pantry

Hands-off cooking. Once it’s in the oven, this is a true walk-away side. Toss it together, set a timer, flip once, and you’re done.

Naturally healthy. This cauliflower recipe is low-carb, gluten-free, and vegan, so it fits into pretty much any way of eating.

A whole family favorite. Even cauliflower skeptics in my whole family tend to come around once it’s roasted this way.

Versatile. It pairs beautifully with chicken, fish, or a curry, and leftovers make a great snack straight out of the fridge.

Ingredient Notes

Cauliflower

You need one head of cauliflower, cut into florets of roughly equal size, about 1-inch each, so they all roast at the same rate and turn golden at the same time.

Olive Oil

This is what helps the spice blend cling to the cauliflower instead of just sitting at the bottom of the bowl. It’s also key to getting those golden, slightly crispy edges in the oven.

You can use any other oil you prefer!

Cumin

The backbone of the spice blend, cumin gives the cauliflower its warm, earthy flavor.

Coriander

Coriander adds a slightly citrusy, floral note that rounds out the cumin nicely. Together, these two spices are really what make this dish taste like more than the sum of its parts.

Cayenne

Just a teaspoon adds a gentle kick, not overwhelming at all. If you’re sensitive to spice, start with half a teaspoon and add more next time if you want it spicier.

Garlic Powder

I like garlic powder here instead of fresh garlic, since it distributes more evenly through the spice mixture and won’t burn the way minced garlic can at high oven temperatures.

How to Make Roasted Cauliflower

  1. Preheat the oven to 400 F and line a large sheet pan with aluminum foil.

  1. Separate a head of cauliflower into florets of roughly equal size (about 1-inch).

  1. In a small bowl, whisk together the cumin, coriander, cayenne, garlic powder, salt, pepper, and olive oil.

  1. In a large bowl, toss the cauliflower florets with the spice mixture until evenly coated.

  1. Spread the cauliflower onto the prepared baking sheet in a single layer.

  1. Roast in the preheated oven until tender and browned, about 30 minutes, flipping once with a spatula after about 15 minutes.

Recipe Variations

Add some brightness. A squeeze of fresh lemon juice right when it comes out of the oven brightens up all those warm spices beautifully.

Add fresh herbs. A sprinkle of chopped parsley or cilantro right before serving adds a fresh, herby finish that pairs really nicely with the cumin and coriander.

Turn up the heat. If you like a stronger kick, increase the cayenne slightly, or add a pinch of crushed red pepper flakes to the spice mixture.

Recipe Tips for Success

Keep the flat sides down. When you spread the cauliflower out on the pan, try to position as many florets as possible with a flat, cut side touching the foil. That’s the surface that actually makes contact with the hot pan, so it’s what gets that deep golden color and caramelized flavor. Florets sitting on their rounded, bumpy side just won’t brown the same way.

Use a large enough pan. If your cauliflower is crowded into a small sheet pan, swap up to a bigger one or split it across two. Crowding traps steam, and steamed cauliflower turns soft and pale instead of golden and crisp.

Let it actually brown before flipping. It can be tempting to check on it early, but resist moving the cauliflower around too soon. Give it the full 15 minutes on the first side so it has time to properly caramelize before you flip it.

Storage Instructions

Let the roasted cauliflower cool to room temperature, then store in an airtight container in the fridge for up to 4 days.

Reheat in a 400°F oven or air fryer for a few minutes to help re-crisp it, or enjoy straight from the fridge as a cold snack – it’s surprisingly good either way.
