Dark Chocolate Truffles with Caramel

Ingredients

good quality dark chocolate heavy whipping cream granulated sugar water sea salt

Coarsely chop up your dark chocolate and put it in a microwave-safe bowl.

Melt the chocolate in the microwave in 30 seconds intervals, stirring between.

Heat up your heavy cream in a small saucepan until it simmers.

Now add your water and sugar to a pan and cook it, swirling in between, till it gets to this golden amber color.

Whisk in the heavy cream with the sugar mixture and combine it well.

Now add in the caramel to the melted chocolate along with the sea salt and mix.

Let the mixture cool in the refrigerator until it is firm enough to roll into balls.

Place the truffle balls on a parchment-lined baking sheet and transfer to the refrigerator.

Now dip your truffles into the tempered chocolate working quickly.

Place the truffles on a prepared baking sheet and sprinkle some flaky seal salt on top.
