Sweet Potato Feta Salad

This is one of my favorite fall salads, made with hearty sweet potato, kale, and a simple dressing - you will love it too!

In a medium bowl, whisk together the olive oil, honey, harissa, salt and pepper.

Add the diced sweet potatoes and toss. Spread evenly on a baking sheet and roast. Toss them to turn once, until  golden brown.

In a measuring cup, whisk together the olive oil, lime juice, mustard, honey, salt and black pepper to make the dressing.

Now add the dressing to your salad greens blend and toss! It's time to plate up - starting with the greens.

Top the greens with roasted sweet potatoes cubes, pumpkin seeds, tangy feta and pomegranate seeds. Enjoy!
