Mini Brownies

Start by making the chocolate cookie crust. Blitz the oreo cookies in a food processor with some melted butter and sugar.

Firmly set this mixture in a tart pan and bake in the oven for 8-10 mins. Set aside to cool.

Meanwhile, start on your chocolate filling! Heat up the heavy cream and milk in a saucepan till it simmers.

Now add the warm mixture to a bowl with your chopped chocolate. Mix it well till smooth.

Next, add in the sugar and salt and give it a good whisk.

Lastly, add in your eggs while whisking the batter so it incorporates well (but don't overdo it!)

Pour the chocolate filling in the tart pan and bake in the oven till it is firm on the edges. This takes about 20 mins or so.

While the chocolate tart bakes, make your glaze by heating some heavy cream and pouring it over your chopped chocolate.

Add corn syrup (to give it some shine) and water (to make it spreadable).

Pour the glaze in the center and tilt the pan to spread it. Watch the video in the post for better understanding!

Time for the fun part - decorating it! Melt some white chocolate in the microwave.

Draw lines on the glaze with the white chocolate with this tool (link in my post!) or just a piping bag.

Drag a toothpick across the lines to complete the pattern. This is how I do it but you can decorate however you like!

I also like to top it with some whipped cream and candy-coated eggs for the ultimate easter feel.
