This cranberry walnut chicken salad is great on its own or in a sandwich. The cranberries provide a tangy contrast to the creamy dressing, and the walnuts add a welcome crunch.

Ingredients

  • 4 cups (about 1 3/4 lb) chopped, cooked chicken breast
  • 1 cup (100 grams) chopped walnuts
  • 1 stalk celery, finely diced
  • 1 tablespoon finely chopped shallot
  • 1 cup dried cranberries
  • 2/3 cup mayonnaise
  • 3 tablespoons white wine vinegar
  • 2 tablespoons chopped fresh parsely, tarragon, basil or whatever you like
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large bowl, combine mayonnaise, vinegar, herbs, salt and pepper.
  • Add chicken, walnuts, celery, shallot and cranberries and toss until well coated.
