4 cups (about 1 3/4 lb) chopped, cooked chicken breast 1 cup (100 grams) chopped walnuts 1 stalk celery, finely diced 1 tablespoon finely chopped shallot 1 cup dried cranberries 2/3 cup mayonnaise 3 tablespoons white wine vinegar 2 tablespoons chopped fresh parsely, tarragon, basil or whatever you like 1/2 teaspoon kosher salt 1/4 teaspoon black pepper
In a large bowl, combine mayonnaise, vinegar, herbs, salt and pepper.
Add chicken, walnuts, celery, shallot and cranberries and toss until well coated.
