Pineapple Teriyaki Chicken Bowls

To make the sauce, mix soy sauce, pineapple juice, brown sugar, rice vinegar, sesame oil, ginger, garlic, and red pepper.

Season the chicken breast with some salt and cook in some oil in a large skillet. Transfer to a plate.

Next, add in red pepper, broccoli, pineapple chunks, and green onions to the same skillet and cook. Take these out as well.

Now cook the prepared sauce in the same skillet till it is bubbling.

Add in the cornstarch slurry and whisk until it thickens up a bit.

Add the chicken, veggies, and pineapple back to the skillet and cook until the sauce coats up the ingredients well.

Serve over rice, sprinkle some sesame seeds and green onions for garnish, and dig in!
