Grilled Chicken Sandwich

To prep the chicken breasts, pound them with a meat mallet so they're about 1/2 inch thick.

For the marinade, combine lemon juice, Dijon mustard, garlic, dried oregano and basil, salt & pepper, and olive oil.

Add the chicken breasts to the marinade mix and let it marinate for about 2 hours in the refrigerator.

Make the aioli by combining sun dried tomatoes, garlic clove, lemon juice, mayo, and fresh basil in a food processor.

Now remove the chicken from the marinade and season with some salt and pepper.

Cook the chicken for 3-4 minutes per side or until cooked through. Set aside to rest.

Now grill your onions for 4-5 minutes after seasoning them with some olive oil salt, and pepper.

Also grill your ciabatta rolls on the grill till they're warm and slightly charred.

Time to assemble! Spread the sun dried tomato aioli on both sides of the ciabatta bread and add your grilled chicken.

Top the chicken with grilled onions and arugula and add the top bun to complete the sandwich.
