Yellow Basmati Rice


olive oil yellow onion basmati rice curry powder turmeric kosher salt vegetable or chicken broth golden or sultana raisins unsalted cashews chopped cilantro or parsley

Start by cooking your onion in some olive oil until it is soft.

Now add in the turmeric, salt, curry powder, and your basmati rice to the pan.

Sauté the rice for a minute or two, making sure to stir it often.

Now add in the broth and the raisins and bring it to a boil.

Once it starts boiling, lower the heat to maintain a simmer and cook the rice covered until the liquid absorbs.

After turning off the heat, let the rice sit covered for about 5 minutes, then take off the lid.

At this point, fold in your cashews and chopped cilantro or parsley.

Fluff it up with a fork and it is ready to be served! Enjoy!
