Goat Cheese Frittata


olive oil yellow onion garlic red bell pepper large eggs milk sun dried tomatoes goat cheese basil leaves

Heat up some olive oil in a cast iron skillet and frying your aromatics - the onion and garlic. Once they're soft, add the red pepper and cook some more.

In a bowl, whisk the eggs with salt and milk. Pour this mixture over the veggies in the pan.

Add the sun dried tomatoes, goat cheese, and basil over the eggs and transfer the skillet to the oven to bake.

Take it out of the oven once cooked through and serve with a nice green salad or some crusty bread. Enjoy!
