Pumpkin Oatmeal Muffins

In a big bowl, add the wet ingredients (eggs, olive oil, pumpkin puree, yogurt, maple syrup, molasses) and mix well.

Follow this up with the oats, flour, baking soda & powder, salt, cinnamon, and pumpkin pie spice.

Mix everything well but don't over mix.

Bake these in a muffin tin for about 14-17 minutes till they're cooked through.
