Top Round Roast Beef

Ingredients

beef round roast garlic dijon mustard butter  flour red wine beef stock salt and pepper

Start with a nice top round roast cut and truss the meat with string. Make tiny slits in the meat and stuff garlic in it.

Sprinkle the roast beef with black pepper and slather mustard over it.

Transfer the roast to a cast iron skillet and to the preheated oven. Roast for 15 mins, then lower the temp and roast till it's done.

Remove the roast from the oven and rest it for 10-15 mins before slicing it.

While the roast rests, make the gravy! In the same cast iron skillet, add some butter and place it over medium heat.

Now add in the flour and whisk for a minute or two.

Deglaze the pan with some red wine while whisking it constantly till it reduces to half.

Now add in the beef broth and let it cook for about 4-5 minutes till it thickens up a bit. Season with salt and pepper.

Thinly slice the roast beef and serve with mashed potatoes, green beans, and the gravy.
