Process the dressing ingredients in a blender, food processor or with an immersion blender. Alternatively, you can finely chop the garlic and cilantro and whisk with the remaining ingredients. Adjust seasoning to taste.
Notes
For a creamy version of this dressing, add *up to* 1 cup of Greek yogurt, sour cream or mayonnaise. To keep it vegan, add 1/2 an avocado instead.
