Caramelized Banana Pecan Oatmeal

Banana slices cooked in a sweet sticky syrup with crunchy pecans, served over creamy maple syrup-sweetened oatmeal.

Ingredients

  • 1/2 cup rolled oats cooked according to package directions
  • 1 tablespoon butter
  • 2 tablespoons light brown sugar
  • 1 banana sliced 1/2 inch thick
  • 1/8 cup pecans chopped
  • 1 tablespoon maple syrup more to taste
  • pinch cinnamon

Instructions

  • In a small skillet, melt the butter over medium heat. Stir in the brown sugar, and let it bubble for about a minute.
  • Add the sliced bananas to the pan in a single layer, and cook for about 2 minutes. Flip the bananas with a spatula, sprinkle the pecans over them, and continue to cook until bananas are softened, another minute or 2. Remove from heat.
  • Scoop the cooked oatmeal into a bowl and stir in the maple syrup. Top oatmeal with bananas, pecans and remaining syrup from the pan. Sprinkle with cinnamon.

Notes

*Cook your oatmeal in milk for extra creaminess and a calcium boost.
