Sweet, juicy strawberries and salty halloumi are piled on top of mixed greens and drizzled with a tangy balsamic vinaigrette in this beautiful grilled halloumi and strawberry salad. Served with grilled bread and a glass of crisp white wine, this is quick and simple summer dining at its finest!
Preheat a gas grill to medium high (or use a charcoal grill).
Dressing: In a small bowl, whisk together the balsamic vinegar, mustard, shallot, salt and pepper. Slowly whisk in the olive oil until emulsified. Set aside.
Thread the strawberries onto the four soaked wooden skewers. Brush the bread slices on both sides with a little olive oil.
Place the strawberries, bread slices, and halloumi slices onto the grill. Grill the strawberries, uncovered, turning occasionally for about 6 minutes, until grill marks appear. Grill the bread about 2-3 minutes per side, turning once. Grill the halloumi slices, turning once, about 2-3 minutes per side. Remove everything to a plate.
Remove the strawberries from the skewers. Divide the mixed greens and mint between four plates. Top with strawberries, halloumi slices, and bread. Drizzle with balsamic vinaigrette, and serve.
