Tofu Summer Rolls

Ingredient Notes

vermicelli noodles  tofu rice paper wraps soy sauce rice vine vinegar sriracha sugar cornstarch peanut oil lettuce cucumber carrot thai basil cilantro mint

In a large bowl, mix together the soy sauce, rice vinegar, sriracha and sugar.

Cook your vermicelli noodles ac to package instructions and let them cool. Now toss them with the seasonings in the bowl.

Cut your tofu block in equal sized sticks and dip each one in soy sauce to season.

Now dip each tofu stick in some cornstarch. At the same time, heat up a large skillet with some oil.

Cook the tofu sticks until they're golden brown on every side. Now let them cool before adding to your rolls!

In a shallow dish, take some warm water and dip your rice paper in it for no more than 10 secs.

Place the rice paper on a cutting board. Season the cutting board with some oil so it doesn't stick. Now add a tofu stick.

Follow that up by the noodles and the rest of the veggies.
