Mediterranean Stuffed Peppers

Let's make these easy and delicious Mediterranean couscous stuffed peppers!

Cut the peppers in half and remove the stem and seeds. Now place them cut side up on a greased baking dish.

To make the couscous, heat up some vegetable broth and add the couscous in it along with salt and turmeric. Set aside and fluff with a fork once its done.

Cook the chopped onions in some olive oil. Now add in your zucchini, garlic, and oregano, and cook more before adding in the black eyed peas and tomatoes.

Add in the cooked couscous, feta, basil, salt, and pepper and give everything a quick stir to combine. Your filling is done!

Fill up the peppers with the mixture, cover with foil, and let it bake for 40 mins. Then remove the foil and bake for another 10-15 mins.

Top with more feta, basil, and a squeeze of fresh lemon juice before serving. Enjoy!!
