Vegan Stew

Slice leeks, celery and carrot, and chop onion, and garlic

Heat olive oil in a large pot and cook leeks until softened

Add carrots, celery, onions, garlic, and herbs, and cook 10 mins 

Quarter mushrooms, cube potatoes and turnips

Add the mushrooms and turnips to the pot 

Add wine and vegan worcestershire sauce and reduce the heat to low 

Add potatoes and cover the pot

Heat olive oil in a saucepan. Whisk in flour, and cook, whisking constantly until it starts to brown

Slowly whisk in hot vegetable broth

Whisk in vinegar, molasses, paprika, and tabasco

Add roux to stew and simmer uncovered for about 1 hour
