Mediterranean Bowl

Start by preparing the couscous. Add couscous, turmeric and salt in a bowl and pour boiling water over it and stir.

Cover the bowl and let it sit for about 5 minutes. Once the couscous is tender, fluff with a fork and let it cool.

Whisk together the lemon juice, olive oil, honey, minced garlic, oregano, salt and black pepper in a bowl.

Add the chopped fresh vegetables in a large bowl with the chickpeas.

Now add in the lemon dressing and toss.

Add the couscous, vegetables and chickpeas in a bowl and top with hummus, and tzatziki. Garnish with parsley and sliced radishes!
