Grilled Chicken Sandwich

Start by pounding your chicken breasts to an even thickness with a meat mallet.

In a large bowl, mix together lemon juice, dijon mustard, garlic, dried oregano and basil, salt & pepper, and olive oil.

Add the chicken to this marinade and let it marinate in the fridge for at least 2 hours.

Prep your sundried tomato aioli by combining sundried tomatoes, garlic, lemon juice, mayo, and basil leaves in a food processor.

Take the chicken out of the marinade and sprinkle with salt and pepper on both sides.

Cook these up on a grill for about 3-4 minutes per side. Now take it out, set aside, and let it rest.

While the chicken rests, grill the red onions with some olive oil, salt, and pepper.

Also heat up your ciabatta rolls on the grill. Now spread the sundried tomato aioli on both buns and add the grilled chicken.

Add grilled onions and arugula on top and cover with the top half. Your grilled chicken sandwich is done!
