Sun Dried Tomato Pesto Chicken

Ingredients

chicken drumsticks and thighs baby potatoes salt & pepper sun dried tomato pesto Parmesan cheese

To make the pesto, add sun dried tomatoes, pesto, garlic, basil, pine nuts, parmesan, and kosher salt in a food processor.

Pulse until chopped and then slowly add in the olive oil and continue pulsing till it reaches your desired consistency.

In a large bowl, toss in the baby potatoes (cut in half) with 1/4th cup of the sun dried tomato pesto.

Also marinate the chicken thighs and drumsticks with 1/4th cup of the pesto. Make sure to get some under the skin as well!

Scatter the potatoes and chicken on a greased baking sheet and season with salt & pepper and transfer to the preheated oven.

Halfway through baking, baste the chicken with the pan juices, brush with some pesto, and sprinkle some parmesan cheese.

It should be done in about 40-45 minutes or check until the chicken is cooked through. Let it rest for 10 mins before serving.
