Cast Iron Chicken Pot Pie

This is the easiest but most delicious chicken pot pie recipe ever!! Let's make it.

Melt the butter in a skillet and cook your onions till soft. Now add the flour and cook for a minute. Add in the broth and whisk well to avoid clumps!

Next, add the evaporated milk while still whisking it. Let the mixture thicken a bit before adding the salt & pepper, followed by the chicken and frozen veggies.

Start on the biscuits by whisking together the flour, baking powder, baking soda, salt and sugar in a bowl.

Now add the cold butter and mix it in with your fingers until a coarse mixture forms. Add in the buttermilk and mix with a spatula.

Use a large cookie scoop to drop the biscuits over the filling in the skillet, covering the surface. Now bake for 20-25 minutes.
