Minestrone with Orzo

Start by cooking the onion, carrots, celery, garlic, and pancetta, in some olive oil over medium heat.

Now add in the tomatoes and rosemary, breaking down the tomatoes. Cook for 10 mins.

Now stir in the parmesan rind.

Add in the beef broth and beans and bring to a boil over medium heat.

Add the orzo and simmer for about 8-9 minutes until the orzo is al dente.

Remove the rosemary sprig and parmesan rind and serve with your favorite crusty bread.
