Blueberry Loaf Cake


all-purpose flour sugar baking powder salt Greek yogurt milk egg vanilla olive oil blueberries turbinado sugar

First, whisk together the flour, sugar, baking powder, and salt in a medium bowl.

In another larger bowl, mix the Greek yogurt, milk, egg, and vanilla extract.

Add in the olive oil slowly while whisking constantly to make sure it is combined well.

Next, add in the dry ingredients and mix just enough so that it comes together. Don't overmix!

Add your blueberries to the batter and mix. Your blueberry loaf cake batter is done!

Pour into a prepared loaf pan and sprinkle turbinado sugar on top. Bake for 50-65 minutes.

Once it's done baking, let it cool completely before slicing into thick slices.
