Peel and cut your carrots.
Heat olive oil over medium heat and add carrots, salt, pepper, and water. Mix it, bring it to a boil, and let it steam.
When the carrots are crisp tender, remove the lid and add butter and maple syrup.
Remove carrots from the heat after the water has been evaporated and add chopped parsley and lemon juice.
