Roasted Salmon Quinoa Bowl

Ingredients

quinoa salmon fillets olive oil salt and pepper cilantro cucumber olive oil lime juice apple cider vinegar chili powder kosher salt chopped cilantro

Start by roasting the salmon. Place the fillets skin side down on a baking sheet, and season with olive oil, salt and pepper.

Now prepare the quinoa by boiling it. You can find the complete instructions to do so at the link!

After the quinoa has cooked, remove from the heat and fluff it with a fork.

Now prepare the dressing by combining lime juice, olive oil, apple cider vinegar, chili powder, cilantro and salt.

Add 2-4 tablespoons of the dressing to the quinoa and stir to combine.

To serve, add the quinoa to a bowl and top it with the baked salmon fillet.

Drizzle with more of the dressing and add thinly sliced cucumbers and cilantro. Enjoy!!
