Roasted Salmon Quinoa Bowl

Start by roasting the salmon. Place the fillets skin side down on a baking sheet, and season with olive oil, salt and pepper.

After the quinoa has cooked, remove from the heat and fluff it with a fork.

Now prepare the dressing by combining lime juice, olive oil, apple cider vinegar, chili powder, cilantro and salt.

Add 2-4 tablespoons of the dressing to the quinoa and stir to combine.

To serve, add the quinoa to a bowl and top it with the baked salmon fillet.

Drizzle with more of the dressing and add thinly sliced cucumbers and cilantro. Enjoy!!
