Roasted Asparagus & Potatoes

Ingredients

asparagus baby red potatoes fresh thyme garlic olive oil butter salt & pepper parmesan

Start by trimming the asparagus to remove the woody part and cut it into 2-inch pieces.

Also cut the baby potatoes in half and transfer to a large baking sheet.

Now mix some fresh thyme, garlic, olive oil, butter, salt, and pepper in a small bowl.

Add half the mixture to the potatoes and transfer them to the oven to roast for about 15 mins.

After 15 mins, add the asparagus and rest of the seasoning, and roast again for 15 mins.

Once the vegetables are crisp and tender, take out of the oven and sprinkle grated parmesan.

Serve warm with any of your favorite mains and enjoy!
