Let's make these super easy and delicious Roasted Asparagus and Potatoes!
Trim the asparagus by removing the woody part at the bottom of each stalk.
Now cut the asparagus into 2 inch sticks and the baby red potatoes in half.
Combine the fresh thyme, garlic, olive oil, butter, salt, and pepper in a small bowl to make the seasoning.
Toss the potatoes with half of the mixture and roast in the oven for about 15 minutes.
Now add the chopped asparagus and the rest of the seasoning. Roast another 15 minutes.
Remove the vegetables from the oven and add grated Parmesan over it. Your side dish is ready!
