Boneless Pork Loin

Rub salt, pepper, and olive oil on the pork and place it in a cast iron pan to roast in the oven.

Combine the cranberry sauce, butter, sugar, vinegar, orange juice and zest, mustard, and rosemary in a saucepan.

Take the roast out of the oven and baste it with the sauce. Return it to the oven for 15 mins and baste it again.

Remove the roast from the oven and stick a thermometer in it before returning it to the oven.

Take it out of the oven once it reaches an internal temp of around 145 and let it rest for 5-10 mins.

Serve in a platter with more glaze on top and your favorite sides and enjoy!
