Ingredient Notes

granulated sugar lemon zest all-purpose flour baking powder kosher salt plain yogurt lemon juice vanilla extract olive oil eggs

First, stir together the sugar and lemon zest in a small bowl.

In another medium-sized bowl, combine the dry ingredients - flour, baking powder, and salt.

Now combine the yogurt, lemon juice, lemon sugar mixture, eggs, vanilla, and olive oil in a large bowl.

Finally, mix together your wet and dry ingredients and your lemon muffin batter is done.

Divide the batter evenly into a 12-cup greased muffin tin and pop in the preheated oven. Bake for 20-22 mins.
