Cherry Tomato Pasta

Ingredients

linguine olive oil yellow onion minced garlic cherry tomatoes sugar kosher salt + black pepper crushed red pepper mozzarella pearls fresh basil Parmesan cheese

Cook your pasta according to package instructions. Make sure to reserve some of the pasta water!

In a large skillet, heat up some olive oil on medium heat and cook your chopped onions until softened. Add the minced garlic.

Cook the garlic for 30 seconds before adding the cherry tomatoes, sugar, salt, and pepper. Turn the heat to medium high.

Cook the tomatoes for 7-8 minutes until they start to soften and burst. Crush them lightly with a wooden spoon.

In the sauce, add the cooked pasta, red pepper, bocconcini pearls, and fresh basil. Toss to combine.

Also add the reserved pasta water as required to loosen up the sauce and finish the pasta off with some Parmesan cheese.

Serve hot and enjoy!
