Orange Cupcakes

Ingredients

cake flour kosher salt baking powder unsalted butter canola or vegetable oil granulated sugar orange zest + juice vanilla egg + egg yolk whole milk cream cheese icing sugar

In a bowl, mix together the flour, baking powder, and salt.

In a large bowl, beat together the butter, oil, and sugar with an electric mixer until light and fluffy.

Now add in the whole egg, egg yolk, vanilla extract, and orange zest to creamed butter and sugar and mix well.

In a measuring cup, or any container of your choice, mix together the milk and orange juice.

Now add the flour mixture and the milk/orange juice mixture to the creamed butter and mix on low speed.

Do this in three parts, alternating between the dry and wet ingredients. Be careful not to overmix!

Pour the cupcake batter into a cupcake tin lined with cupcake liners. Only fill about three fifth full!

Bake for 15-17 mins in a preheated oven. Let them cool completely before you frost them!

To make the frosting. first beat together the cream cheese and butter. To this, add the orange zest and vanilla.

Now add in the powdered sugar and mix it until fully incorporated and you're left with a smooth frosting.

Using a small spatula, spread the frosting on each orange cupcake. And you're done!
