Take your 3lb loin roast and rub salt, pepper, and olive oil on it. Place it on a cast iron pan and roast in the preheated oven for 30 minutes.
In a saucepan, mix cranberry sauce, butter, brown sugar, cider vinegar, orange juice and zest, dry mustard, and rosemary. Cook for a while and remove the rosemary sprig.
After 30 minutes, take the roast out of the oven and baste it with the cranberry sauce. Return the dish to the oven for an additional 15 minutes and baste it once more.
Remove the roast from the oven and stick a thermometer in to check its temperature.
Return the roast to the oven, and take it out after the thermometer registers around 145F.
Now place it on the cutting board and brush it with more glaze. Let it rest for 5-10 minutes.
Then, gently reheat the pan with the remaining glaze while adding the juices that have accumulated on the cutting board. Slice the roast and drizzle it with glaze.
