Mediterranean Couscous Stuffed Peppers

Classic stuffed peppers with a healthy Mediterranean twist! Let's make these.

Cut the bell peppers in half and remove the stem and seeds. Now put them (cut side up) in a greased baking dish.

Now cook your couscous with some salt and turmeric as shown. Fluff with a fork before using!

Cook your onion in olive oil till soft. Add the zucchini, garlic, oregano and cook some more before adding chopped tomatoes and black-eyed peas.

Add in the couscous, feta, fresh basil, and stir. Season with salt and pepper to taste.

Stuff the peppers with this mixture and cover with a foil to bake for 30-40 mins. Bake it  10-15 mins more uncovered.

Top the bell peppers with some feta, basil, and lemon juice squeeze before serving. Enjoy!
