Couscous

Stuffed Peppers

       EASY | VEGETARIAN

Seed and halve 4 bell peppers

Place peppers in a 9 x 13" baking dish

Combine hot broth and couscous 

Stir in the turmeric and salt, cover and set aside

Cook chopped onion

Add zucchini, garlic and oregano

Stir in black-eyed peas and tomatoes

Fold in couscous, feta, basil, salt and pepper

Stuff peppers and cover dish with foil

Bake!
