Chicken and Potato Curry

In a bowl, marinade your chopped chicken breast in some curry powder, lemon juice, and kosher salt.

Next, in a cast iron or any other skillet, cook this chicken in some olive oil till golden brown on both sides. Take it out on a plate.

In the same skillet, cook sliced onions for 5 mins in some olive oil. Now add in garlic, ginger, curry powder, garam masala, and tomato paste.

After about 30 seconds, add in the chicken or vegetable broth, milk, brown sugar, and salt.

Time to add in the chopped potatoes and let this simmer for about 15 minutes till the potatoes get soft.

Add the chicken back in the pan along with the frozen peas and cook until the chicken is cooked through.

Sprinkle some fresh cilantro on top and your chicken and potato curry is ready to be served!
