Caramel Corn

Ingredients

canola or vegetable oil mushroom popcorn kernels butter light brown sugar corn syrup kosher salt vanilla extract baking soda

In a heavy bottomed pan, add oil and let it heat up. To check if it is hot, drop a few kernels in the pan.

Now add all your kernels in the pan and cover with a lid, leaving it slightly ajar so that the steam can escape.

Gently shake the pot on the burner, continuing until popping slows to 2 seconds between pops.

Now remove the pot from the heat and take out the popcorn in a large dish.

To make the caramel, heat butter, brown sugar, corn syrup, and salt over medium heat, stirring until it boils.

Once it starts boiling, let it boil for 4 minutes without stirring.

Remove the pot from heat and add in the vanilla and baking soda while stirring.

Pour the caramel over the popcorn and stir well until the sauce coats the popcorn really well.

Transfer the popcorn to your preheated oven for an hour. Make sure to give it a stir every 15 mins or so.

Once the popcorn no longer sticks together, take it out enjoy!
