Grilled Zucchini and Summer Squash

Ingredients

zucchini yellow summer squash olive oil balsamic vinegar dijon mustard minced garlic kosher salt black pepper parsley parmesan cheese

Start by cutting your vegetables lengthwise, into 1/2 inch thick slices.

Now in a dish, add the olive oil, balsamic vinegar, mustard, garlic, salt & pepper and whisk.

Once it's well combined, add your veggies and leave them to marinate for about 15-30 mins in the refrigerator.

Season with salt and pepper before adding them on the grill to cook for about 5 minutes or more on each side.

Baste once with the leftover marinade and remove from grill once crisp tender. Enjoy!!
