Chimichurri Chicken Thighs

These chimichurri chicken thighs are so easy to make and make for the perfect summer meal!

In the bowl of a food processor, combine the cilantro, parsley, oregano, shallot, garlic, and jalapeño.

Now add in the lemon juice, red wine vinegar, olive oil, salt, and pepper and pulse until well combined and finely chopped.

Place the chicken thighs in a baking dish, season with salt, pepper, and some of the marinade.

After letting it marinate, fire up the grill and cook the chicken thighs for 5-6 mins per side.

Serve with extra chimichurri and enjoy!
