Grilled Balsamic Chicken Salad

First, make the marinade by mixing olive oil, balsamic vinegar, Dijon mustard, garlic, salt & pepper.

Reserve some of the marinade for the dressing and for basting, and add the chicken breasts to the rest.

Season the chicken with some salt and pepper before cooking it on the grill. Baste it once with the reserved marinade.

Let the chicken rest for 10 minutes before slicing it into thin slices.

In a large bowl, toss the arugula with the reserved marinade.

Add the arugula on a plate and top with the cooked and sliced balsamic grilled chicken.

Top with cherry tomatoes, burrata cheese, salt, pepper, and chopped basil.
