Zucchini Tomato Tart

Ingredients

pie dough  feta cheese cream cheese garlic olive oil fresh herbs zucchini cherry tomatoes salt + pepper egg wash (egg yolk + water)

First, start making the whipped feta. Add feta cheese and cream cheese to a food processor and pulse to combine.

Now add the chopped garlic, olive oil, black pepper, and chopped fresh herbs of your choice.

Pulse it on high speed until it is smooth, creamy, and airy. That's your whipped feta done!

Add your sliced zucchini and tomatoes to a bowl with some salt, pepper, and olive oil. Toss.

Roll out the pie dough into a circle and transfer it to a parchment lined sheet. Visit the link for the pie dough recipe!

Spread the whipped feta on the pie dough, leaving about 1.5 inches on all sides.

Now add the seasoned veggies on top without adding any of the juices. Fold the edges of the crust over the tart.

Brush the edges of the crust with an egg wash made from egg yolk and water. Transfer to the preheated oven!

Bake for 30-40 minutes until the edges are golden and the veggies are tender. You're done!
