Udon Stir Fry (Yaki Udon)

Ingredient Notes

udon noodles low sodium soy sauce vegetable broth rice vinegar sesame oil vegetable or canola oil garlic & ginger carrots mushrooms green onions baby bok choy or toy choy hot chili oil

Soak udon noodles in hot water while you make your sauce. Combine soy sauce, broth, rice vinegar, sesame oil, and chili oil.

Heat up some oil in a large pan and cook your chopped ginger and garlic in it for about 30 seconds.

Now add in the sliced carrots and cook for about a minute while stirring constantly.

Next add the mushrooms and green onions and cook for a minute before adding the toy choy.

After two mins or when the toy choy is crisp tender, add the udon noodles and stir fry with the veggies for another two mins.

Add in the stir fry sauce and cook till it thickens up and coats all the ingredients. Continue cooking to heat everything up.

Serve warm and enjoy!
