Roasted Tomato Pasta

Ingredients

Roma tomatoes garlic yellow onion olive oil kosher salt black pepper rigatoni

In a baking dish, add your halved tomatoes, onions, garlic, olive oil, salt & pepper, and toss to combine.

Transfer the baking dish to a preheated oven and roast the tomatoes for one hour.

Mash the roasted tomatoes with a spoon to create a chunky sauce. You can also do this in a blender for a smoother consistency.

Add your cooked pasta in the baking dish and toss to combine.

Serve with lots of parmesan cheese and fresh basil!
