Chicken Fajita Quesadillas

Pound the chicken breasts to an even thickness and then cut them into 1/2 inch even long strips.

Whisk the chili powder, salt, cumin, onion & garlic powder, cornstarch, lime juice, olive oil, and chicken broth in a bowl.

Add the chicken strips, onions, sliced red and green bell peppers and mix well. Let this marinade for at least 20 mins.

In a large skillet, add the chicken and veggies and cook until the chicken is cooked and the veggies are crisp-tender.

In another skillet, add some olive oil and a flour tortilla. Add 1/4 cup of monterey jack cheese on one side, top with the chicken and more cheese.

Fold the empty side of the tortilla and cook both sides until golden and crispy. Your chicken fajita quesadillas are done!

Serve with some salsa and enjoy!
