Coconut Rice Pudding

Ingredients

full fat coconut milk whole milk water sugar short grain arborio white rice pinch of salt egg maple syrup vanilla toasted shredded coconut

In a medium saucepan, add your rice, coconut and whole milk, water, sugar, and salt. bring to a boil.

Bring the heat down to medium-low and let it simmer for 20-25 mins. Stir often and once the rice is tender bring the heat to low.

While the rice is on the stove, whisk together the egg, maple syrup, and vanilla in a bowl.

Add about half a cup of the hot rice mixture to the bowl and whisk it well. Add another half cup and mix.

Pour the tempered egg mixture to the saucepan and stir continuously for 5 mins. Don't let it start boiling.

Take the pudding off the heat and let it cool down until it is just warm.

Meanwhile, for the topping, toast your shredded coconut in a dry pan until it is golden brown.
