Orange Cranberry Oatmeal Muffins

Ingredients

all-purpose flour baking soda + powder kosher salt eggs + egg yolk granulated + light brown sugar milk Greek yogurt vanilla orange zest rolled oats cranberries

Start by whisking together the eggs, egg yolk, both sugars, butter, milk, yogurt, vanilla, and orange zest in a large bowl.

Now stir he rolled oats in this batter and let it sit for about 10 minutes or so.

In another bowl, mix together your dry ingredients AKA the flour, baking soda, baking powder, and salt.

Now gently stir in the flour mixture to the wet batter. Be careful not to overmix!

At the end, gently fold in the fresh cranberries to the batter.

Now fill your muffin tray with the batter and sprinkle some sugar on top. Bake in a preheated oven for 20-22 mins.

Let these cool on a wire rack in the muffin tin before diving into these!
