Chicken Tacos with Cilantro Lime Slaw

Start by marinating your chicken in a mix of lime juice, olive oil, garlic, salt & pepper, cayenne pepper, and cumin.

Let it marinate for overnight or at least 30 mins. Place in a greased baking dish and sprinkle with salt and pepper.

Bake for 30-40 mins or until cooked through. Also baste the chicken with the reserved marinade halfway through.

You can also turn on the broiler to give it a bit of color. After letting it rest, shred the chicken.

Now start on the cilantro lime slaw. Mix the the mayo, sour cream, lime juice, garlic, cilantro, salt, and pepper in a bowl.

Add in the shredded purple cabbage and toss to combine.

Time to assemble. On a warmed up tortilla, add your chicken, slaw, queso fresco, and any other toppings you like.
