Chimichurri Chicken

Let's make these perfectly juicy and delicious chimichurri chicken thighs!

In a food processor, chop up your cilantro, parsley, oregano, shallot, garlic, and jalapeno pepper.

Add lemon juice, red wine vinegar, olive oil, one teaspoon kosher salt and  pepper. Pulse just until finely chopped, but not perfectly smooth.

Now season the chicken thighs with salt & pepper, and some of the freshly made chimichurri marinade.

After letting it marinade for a while, it's time to grill your chicken! Cook it for 5-6 mins per side and it should be done.

Serve with corn on the cob and some extra chimichurri on top and enjoy!
