Chimichurri Chicken Thighs

Let's make the perfect summer meal - these quick and easy chimichurri chicken thighs!

To make the chimichurri, start by pulsing some cilantro, parsley, fresh oregano, shallot, garlic, and half a jalapeno pepper in a food processor.

Now add in your lemon juice, red wine vinegar, olive oil, kosher salt, and black pepper and pulse more until everything is finely chopped.

In a baking dish, place your boneless, skinless chicken thighs and season with salt and pepper. Add some of the chimichurri sauce to it and let this marinade.

After it's done marinating for at least 2 hours, throw it on the grill and cook for 5-6 minutes per side till the chicken is done.

Serve with extra chimichurri and your favorite veggies and enjoy!
