Blackened Fish Tacos

Let's make these super easy and delicious blackened fish tacos - perfect for the summer!

Mix up a simple cajun seasoning and sprinkle the fish on both sides with a liberal amount of seasoning.

Now heat some oil in a large cast iron skillet and fry your seasoned fish untill cooked.

In a large bowl, whisk together the olive oil, vinegar, lime juice, garlic, salt and pepper for the black bean and corn salsa.

Now add in the black beans, corn, tomatoes, onion, and cilantro, and mix.

In a small bowl, combine the sour cream, lime zest, lime juice and salt to make the lime crema.

Assemble your tacos with all the toppings - add some cheese and extra cilantro on it too!
